Like regular spinach, the Water Spinach, or Kang Kong, can be steamed or boiled to one’s liking. Though eaten raw in parts of the world, such practice is not recommended as raw consumption may lead to Fasciolopsiasis, or growth of intestinal parasite . 

A very nutritious vegetable, the water spinach is abundant in health benefits, and is commonly used as a purgative and an anthelmintic. Due to its fiber content, the water spinach has a good effect in the intestines and acts as an insulin substitue to control blood sugar. Especially beneficial to diabetics, the plant is rich in iron, calcium, protein, vitamins and various amino acids, among others.

Other health benefits includes reducing menstrual pain, head and toothache relief, skin problems, ulcers and in the promotion of hair growth.
