Though grown primarily for its edible tubers, Ullucos are perfectly edible as leaf vegetables. Its popularity and harvest in South America comes second to the potato and is considered an important root due to its inexpensiveness and high nutrition content, including protein, calcium and carotene. In New Zealand, they are commercialised as “Earth Gems”. When boiled or cooked, the crisp texture of the “Earth Gems” remains even throughout, without becoming soft and mushy. Ullucos are distinguished by its sweet, crunchy taste and misshapen tubers in a strange variety of shades and colours.
