Thyme is a warm, flavorful herb with a rich, fragrant aroma and flavor, a culinary and medicinal herb of the genus Thymus.Thyme is a good source of iron and is widely used in cooking. The herb is summer seasonal, comprised of a woody stem with multiple sprigs of leaves and flowers extending from it. The leaves are paired and oval shaped, spaced about 2 centimeres apart on each sprig, measuring around 0.5 centimetres. It has a strong flavour: warm, woody and aromatic, and can be used fresh or dry. Like bay leaves, thyme releases its flavour slowly and should be added early in cooking in contrast to other more delicate herbs.
