Edible seeds of the Pine family, classified as nuts. Though most species of the pine family produce edible nuts, only 20 species are chosen for yields large enough to be harvested and sold wholesale for profit. Pine nuts are common additions to meat, dish and vegetable dishes, otherwise they also make fine ingredients in bread making. In Italy, pine nuts are an indispensable ingredient in the famous pesto sauce. There is also the New Mexican Pine nut coffee, “piñón”, which has a nutty tasting dark roasted coffee drink.
