Lemongrass is a tall, perennial grass that is native to India, Indochina and tropical Australia. It has long been used for medicinal and culinary purposes throughout these regions, prized for its strong floral ros- like fragrance mixed with a fresh, grassy aroma.It is a fibrous long, slender grass with course, flat, grassy blades that ranges in size from approximately 15 to 30 centimetres long. On the palate, lemongrass has a refreshing lemon-lime citrus taste with a tinge of mint and ginger, and is a characteristic ingredient of Southeast Asian cuisine, particularly Thailand, Indonesia and Vietnam.
