Vigna Angularis

It is widely grown throughout East Asia and the Himalayas. It has a bright uniform red color and is smooth to the touch. However it also has some variation in color which includes black, white and grey. It is often sweetened and made into a paste. It is used in Japanese sweets like Daifuku (a small round glutinous rice cake filled with red bean paste).
