A native tree of India, the curry tree is an upright branching tree growing 2-5 metres. It can be identified by its clusters of small, white fragrant flowers and shiny black berries in the summer. It is a tropical to sub-tropical tree, that does best in a warm, sheltered position with well drained soil. The leaf is used commonly in Indian and Sri Lankan cooking to flavor curries, chutneys and marinades. It is a pungent leaf with a strong, spicy herb-like aroma and hints of bell pepper and citrus, with a pleasant, mild bitterness.with overtones of citrus and anise. The leaf is best when used fresh, fried in oil to release the rich essential oils.
