Corn salad

A small dicot annual plant of the Valerianaceae family, the Corn salad known by many names including fetticus, mâche, feldsalat, nut lettuce and Rapunzel. The hardy plant favours milder climates and is grown as a winter green. Regarded a common weed in both Europe and Asia, the wild Corn salad is typically found in cultivated land and waste spaces. Like its other formerly scavenged green counterparts, corn salad has many nutrients including a high content in vitamin C, beta-carotene, B6, B9, vitamin E, and omega-3 fatty acids and is best gathered before its flowers appear.
