A ornamental plant cultivated for its herbal properties and decorative purposes. The common Salsify is arguably one of the most recognisable species of the Asteraceae family. Like many of its Salsify counterparts, the Common Salsify has a milky sap. Its hermaphroditic flowers are pollinated by insects. Its roots notably resemble the taste of Oyster, giving the plant its nickname of Oyster Plant. The roots are used as a vegetable while its shoots can be used like an asparagus.
