Chipotle peppers are smoked jalapeno chilli pepper, smoked because the thick, fleshy, jalapeno was difficult to dry and prone to rot, and the smoking technique allows the chilies to be stored for a substantial period of time. It exists in two forms: chile ahumado, which is a whole smoked chilli in a grayish-dull tan to coffee color and measure approximately 10 centimetres in length and about 3 centimetres wide. Alternatively, morita is the more commonly available version, a dark reddish purple colour that has undergone a shorter period of smoking, and is therefore cheaper to produce than the ahumado. Both varieties offer a distinctive, rich, smokey and spicy flavour that is used most commonly in Mexican and Southwestern cuisine in the United States.
