Arrowleaf Elephant’s Ear

A tropical flowering plant of the Xanthosoma genus, Arrowleaf Elephant’s Ears produce edible, starchy tubers. Immensely popular in Colombian, Puerto Rican and Spanish cuisine – the vegetable is often pureed with a selection of meat. Besides food, its large leaves provide an excellent shade from the sun. The Arrowleaf Elephant’s Ear is also used in weed control.
